Hmm... It was more expensive to add pebbletec with my builder. Pebbeltec will last longer that plaster and is more durable. It is rough, but not horrible.
We chose harbor blue and if i had to do it again I would choose a coating other than plaster because it shows the inconsistencies in the trowel work easier. It's not very noticeable, but I see it.sigpic

Our pool is all shallow too. 3.5ft down to 6ft in the middle and back up to 4ft and the other end.
The plaster is as smooth as a babies bottom in our pool. It's nice when sitting in the spa.sigpic

I would've gotten the pebblesheen, but was told that you have to have border tile below the flagstone coping, which I did not want at all, hence our final decision.

I didn't end up doing a waterfall like that because all of the standard ones I've seen ended up looking awkward. I went with a rock wall that trickled water across the entire wall instead. My next pool will have a larger water feature, but built into the landscape somehow.
I like the step into the spa too. I didn't think about that so it's a bit of a step down to get into our spa. I like your fire pit too.sigpic
