How hard would it be to take out Soros?

Not very hard. You need some basic skills and the will to do it along with a little bit of luck.

He's a US citizen with his own private security. About as difficult as any other wealthy celebrity.

I have been on the inside of a presidential security screen on numerous occasions and have made this observation. No one can not be gotten to. Even the POTUS with the resources of the most powerful nation that has ever existed could be taken out by a few infantry squads if they had a few stingers & javelins or even the old Carl Gustav recoilless rifles if you have a few guys that are good shots with them. No private person, no matter how much wealth they have can have the depth of defense that the POTUS gets and that depth is where the real protection comes from.

I have bright ass LED's, reflective vests, a flashlight that can make it daylight outside, and people still almost run me over. Plus it almost looked like they were in a curve.
