Until you've proven it true, I don't have to prove it not true. I'll try to simplify it for you. When you have an assertion with no evidence that corroborates your assertion it is reasonable and logical to assume that it is not true. True statements are true, and demonstrable, not true statements are not true, and not demonstrable.

I'd disagree. Scientific laws are like axioms, and very limited in application - Newton's laws, Maxwell's equations, thermodynamic laws, etc... The scientific community rarely describes anything in such absolutes, but prefers postulates developed from the combination of observation and accepted scientific laws - hence the ever present term "theory".
Would anyone deny the existence of gravity? It's pretty widely accepted; perceivable, demonstrable. Yet it is still only a theory in scientific terms.
We've achieved a technological ability to also observe the expansion of the known universe. We know without a doubt that it is expanding, and that's what the big bang theory boils down to.

It does however first require acceptance that the singularity which started the Big Bang simply "appeared", which in itself is a belief.
Only if you believe that the beginning of all existence and time also started at that singularity, or if you look for purpose in it. I personally don't see it as anything but the beginning of the observable expansion of the universe.
It's admittedly a nice starting point for metaphysical conversation, and so I'd guess that's why it comes up so often. I've never been able to absolutely stand by atheism because I can't find a reason why anything exists at all. It's a big hole in my psyche, same as anyone, except I don't fill it with any particular belief or religion.
