    oops i meant 200, sorry , everything on the internet said 175-195, and mine got just over that.

    I was actually needing it to be done soon though, I couldn't go much past 7 hours before guests would come.

      Well believe it or not I used a kettle style grill to smoke for years. Problem was can't put much on it. So I went out and got a cheapy char griller with fire box on the side last week. Had trouble getting temp above 200 and keeping it there. Seemed to loose smoke also from here and there. This is a new thing using a full size grill so still learning I guess. It came out great but was more work it seemed. I like pecan wood personally and used a apple juice filled water pan. Ill get it down. BBQ for life.

        it's all that lack of air control that makes other smokers suck bad.
        that's why you gotta keep loading that shit up like a sweaty train conductor.

        a friend of mine said he really finds it relaxing just loading and monitoring a smoker. I kind of thought that was odd, since it didn't take me long before I just felt it was a lot of damn work.

        I told him a UDS smoker wouldn't work for him, It's TOO DAMN EASY !
