    They came out juicy but not quite the flavor I was expecting (not strong enough). Everything I read online said to do a 1:1 ratio of ground beef to chorizo but I thought that might be to strong so I went with a 2:1 ratio. It was to weak IMO.

    I guess the other issue I was having is that I was cooking them on a griddle so I could get a nice crust on the burgers but with the chorizo on there I was constantly having to "mop" up all the grease that was building up.

    I'll be ordering a grinder sometime this week so I can experiment more different cuts of meat.

      You obviously get it and that's a good idea. Bass Pro is a little far from me but Ace Mart is a little closer. Either way, this looks like what I'm going to do.
      Were they not beef fajitas simply ground up? I dont see how it can be that different unless you can replicate the fajita seasoning...its just an order of operations deal.

            If theyre not different parts of the cow...then how is it different if you season before or after the grind? Even if theyre the different cuts...they wont have a substantially different taste.

            Sounds like someone trying to church it up...when its really just the leftover fajita meat mixed with the ground beef.

                      Not different enough, espeically with that much seasoning and ground. And a large percentage of fajitas are also from chuck, sirloin, flank or round anyways so youre still way off the mark.

                            People in Rockwall, ya ever hear of a place called boots burgers. Google map burgers in Rockwall area and this came up its in a house as if it was your neighbor. Reviews say its good.

                              So I just cooked some fajita burgers for the third time this month and it's definitely more than just fajita seasoning on ground beef. Not only is the flavor different but so is the texture. Definitely something I need to grill more regularly. Sorry no pics, I was hungry and it was getting dark out. Next time.

                              BTW, bought some hatch chili with cheese crumbles burger patties at my local Kroger this afternoon. I'll be grilling those up this weekend

                                i had one of the hatch chile, bleu cheese crumble patties from central market. it was just alright. i dont really care for stuffed patties though. just beef, and put whatever toppings i want
