Has anyone ever had mollejas before? My friends call them "Mexican Sweet Breads" but they are not the dessert type. It's a type of meat that Mexican's grill.

Sweetbreads or ris are culinary names for the thymus (also called throat, gullet, or neck sweetbread) or the pancreas (also called heart, stomach, or belly sweetbread), especially of the calf (ris de veau) and lamb (ris d'agneau), and, less commonly, of beef and pork

I've only had lamb sweetbreads, and they are delicious. First time my wife had them we only told her it was 'meat' until after she ate a bite - and she loved it. She said if I would have told her it was a lamb thymus there's no way she would have tried it.

I do not discriminate on the types of "sweetbreads" I eat

I've had it a few times but really didn't know what part or animal it came from.
