  • Easter Grilling Plans?

    Looking for some ideas but also thought it would be good to have everybody share what they are doing.

    About all I have set in stone so far is to smoke some ribs on the Kamado. Maybe some steaks, hot dogs, baked potato, and a good salad.

            I got a party pack of NY strip seats (8), a 4 pack of ribeyes, about a 6 pack of chicken boneless breasts and 8 Opa sausages w/jap & cheddar. All that shit is getting infra red cooked with the usual sides...

                Good ideas everybody! I know I won't be doing fish, I've gotten sick of fish the past few weeks I've never been good with grilling chicken but I think I'll cut back a little on the steak and mix in some chicken as well. Not sure how I'll prepare it yet but I may post back in here for some suggestions later. And I think I'll do some beer ribs this time. I'm always doing pork and I've got that down solid but I rarely do beef ribs.

                LOL! That sounds good! I had some a couple of weeks ago at a buddy of mines house.

                Has anyone ever had mollejas before? My friends call them "Mexican Sweet Breads" but they are not the dessert type. It's a type of meat that Mexican's grill. I've had it a few times before but I've never grilled them myself. Just thought I would share in case someone was interested in grilling something different.

                I did a quick Google search for those interested.

                Crispy tender sweetbreads known as mollejas are a popular taco filling in South Texas and the Rio Grande Valley. This a sweetbreads recipe for pan-fried mollejas, which cook up crunchy on the outside with a silky interior. Serve with hot tortillas and salsa.

                  I might have to try those. I'm surprised my buddies dad has never brought it to a cook out. He always brings Mexican foods I like to get in on ( and some things I dont! ).

                  I think I could eat some variation of Mexican food everyday. I can't get enough of it.

                      Good advice there, plus marinating (vacuum sealing is awesome, it soaks in well) and cooking on indirect heat until done. I smoked some this last weekend for a friends birthday party, and didnt have the ability to do a marinade or brine. We rubbed them down with an off the shelf rub with lots of garlic, and smoked them for a couple hours. We finished them off on a hot grill to get a char on the skin. Turned out great.

                          Give it a try and let me know what you think. I've never really looked for them in a Mexican meat market but my friends gave me the impression that they are not something readily available like fajitas so just a thought. The link I provided is spot on though about what I think of them. Good stuff.

                          You know I've never gone to the trouble to brine anything before. My cousin did some chicken like that one time I was over and it was pretty damn good. I wasn't planning on a lot of chicken so I'm not sure if it's worth the effort right now but I'll think about it.

                            We did a brine on a whole chicken and let it sit over night last week. I then slathered that bitch with olive oil, covered it Rudy's rub and inserted some, tyme, rosemary and parsley into the cavity and oven roasted it for a couple of hours. It came out pretty damn tasty.
