Anyone tried them?
I made some on Monday. I just chopped the tops off, cleaned out the guts, stuffed them with shredded cheddar, and then wrapped them up in bacon. I cut come center-cut bacon in half and ended up using two halves, but it helped having two pieces each. Then I grilled them over charcoal until the bacon was done.
They were excellent. And even without the seeds and veins, they were still pretty hot. The heat wasn't bad at first, then it kicked in strong, but didn't last too long. I like them better than jalapeno poppers, because these are small enough to just pop the whole thing in at once.
I should have taken some pics. Oh well. I have read some other reecipes about using a batter and cutting them in half, etc. This was definitely less trouble. If anything, I may try to deep fry them with some type of cornmeal coating next time.
