I still like Tillamooks extra sharp cheddar. Not sure why they didn't include an extra sharp study.

These people make the best jalapeño cheddar I've ever had in my life. The cheddar has bite, and the jalapeño gives it a pretty decent kick. I picked some up while in Fredericksburg, but I understand they've got it in a few stores in DFW.

I tried the caraway and didn't care for it, but I'm not a big fan of carraway seed to begin with. It was too much carraway for my taste, but by that same token that's what I liked about the jalapeño cheddar was the ton of jalapeños in it, which gave it the kick I like.

Have you ever tried to do fondue at home? I tried to duplicate the cheese from the Melting Pot. It wasn't bad but it wasn't the same.

It actually had cheese as the primary ingredient once. Now it's just chemicals that are technically in cheese, but it ain't cheese in the can.

I like bleu cheese for dressings and dips, but not general snacking nor on crackers.

Havarti is good (both plain and dill).

I really enjoy the Tillamook cheeses. Sam's carries them in 2.5 lb blocks.
