  • Tilapia recipes?

    I've never been a big fan of fish ever since I can remember. I can do tuna but never bothered with anything else up until today. Had some baked tilapia today and I was quite surprised at how good it was and that it didn't really have a fishy taste to it. All I used was a bit of pepper and salt. I've been eating a lot more healthier foods and figured it was time to include some fish into the mix.I don't want to get burnt out on it so I'm trying to see what other ways I can make it.

      I started eating baked tilapia in the past year or two, and I dig it.

      I like to use quite a bit of "juice" in a baking dish. I experiment with olive oil, butter, soy sauce, worchestire, lime juice, and white cooking whine. Not all at once, but I'll mix a couple of those together and get the fish all lathered up. Then I'll season with garlic, black pepper, maybe a little kosher salt (but not if I used soy sauce), and sprinkle it with cilantro, then bake.

      I'll also do the juices above and then season a few of the filets with only hot Slap Yo Mama, then bake. Go easy or it will be way too strong.

      Another way, which I actually picked up from here, is to spread sour cream on the filets and then sprinkle a coating of parmesan cheese on them, then bake. Not healthy, but very tasty.

      And one of my favorites is the juices and then jerk seasoning. Yum!

      You can do just about any flavor theme that you want, including Asian, Italian, Greek, etc.

            Thanks for the input. Will starte to do the same. The sour cream and parmesan cheese sounds very good.

                    The world is your oyster when it comes to fish. You can do just about anything. Compound and herb butters are great with fish. Steam it, grill it, bake it, pan sear, etc. Think citrus and herbs.


                    Tilapia is so dirty, though. Step up to something more clean and meaty.

                      What he said...tilapia is sourced from overseas/South America. Though tilapia is a mild, good-tasting fish, I prefer to no longer consume anything raised in such conditions as often exist on Chinese fish farms.

                          I have recently discovered salmon. I was never much on fish, but salmon is awesome. I've prepared it many ways, but my favorite is grilled. Lately I've been cooking it over an open mesquite or pecan fire. It gets a little smoke flavor, but doesn't overwhelm the fish.

                              It's cheap, and widely available. That's really the only reason IMO. People who generally don't eat or don't care for fish, it's a good entry level fish. People new to fish aren't going to spring for Mahi, or CR Salmon for instance.
