Good fish recipes?
Make a foil packet for each fillet, and roll down the sides just to leave a shallow holding area for the butter. Lightly season fillets, add herb butter on top, throw them on the smoker over some apple wood (or your favorite flavor) at 200* and a couple hours later when the intently temp is about 165* your done and ready to eat. Cook time will vary depending on type of fish, e.g. density of the meat and fillet thickness. This is also a great way to cook them whole with the skin still on.

Crappie are great just about any way, they are a great tasting fish and any method of cooking works well with them.
Sand bass (white bass) I actually like to coat in a light olive oil and then skillet fry, or blacken on a grill. Be sure to trim all of the red out.
