Thought I would finally chime in on this thread after having seen it so long ago. I picked up a Maverick ET-733 after seeing Matt's suggestion on it.

[ame="http://www.amazon.com/gp/product/B00FOCR4UI/ref=oh_aui_detailpage_o06_s01?ie=UTF8&psc=1"]Maverick ET-733 Long Range Wireless Dual Probe BBQ Smoker Meat Thermometer Set[/ame]

I have only used it once but it worked out great and kept me from going out and checking the temperature every hour; although I did have to go out a couple of times and adjust my vents after seeing it on the wireless display. I was previously using a digital thermometer but it wasn't wireless like this one. The display is a different than the one Matt has and this is a dual probe so I have one in the meat and another on the grill to read both temperatures. Seems like the grill temp is off but I'm guessing that's because of the difference in placement.

Other than that, I have a lot of the tools recommended hear. I have a charcoal starter but I mostly just use that when I go camping and use an electric starter on my grill at home. I have a water bottle sprayer I picked up at some dollar store and some rubber insulated gloves for handling hot meat that I picked up at Academy pretty cheap.

Any suggestions on a good knife for cutting brisket? I've just been using whatever I find in the kitchen but I really want something better and I guess more purpose built for the job. Ideas?

I use the iDevice iGrill 2 as a wireless thermometer. Uses bluetooth to connect to your phone and graphs all your temperatures so you can see how often you need to add wood so as to avoid dramatic dips in temperature.

Just picked up an igrill2, which came with 2 meat probes, and I also picked up an ambient probe. I'll post up what I think when I finish the smoke tomorrow.

Let me go ahead and review this POS.

There was nothing easy about programming it, the probes went ape shit on me, and well I just hated everything about it. Oh and the batteries died randomly at different spurts. I got way more use out of my 10.00 ones from Academy.

Those are super simple to use. If the probes went ape shit, it is because you got them wet.

I'll have to agree, there a little bit of a PITA to program. Maybe I don't use it enough but I'm always having to refer back to the instructions. That being said, I bought mine last December and it's still working great. Every once in a while it will loose the connection but after a minute or so it usually reconnects. Great tool and it's helped me get some sleep at night when doing a late brisket.

I use the earlier Maverick (non-programmable) and love it. Very accurate and dependable.

Older ones are nice, used one for a long time. I have the iGrill2 and it is far better, well worth the extra money.

I'll agree with that. The graph feature alone makes it worth the $99 in my opinion.
