    These hillbillies basically do a blend of mesquite and pecan, or oak. They all opine that oak burns the hottest, but I've never had a problem getting mesquite to burn hot enough, so I don't seek it out.

        I have used it on a boston butt and some briskets in the past but I like the flavor mesquite puts in those meats better than pecan.

        A caveat to that rule is if I take the time to make a mop/marinade that uses a dry red wine as a base, then pecan seems to go really well with that.

          Central Texas BBQ, Smitty's uses seasoned Oak, Kreuz uses Post Oak, and Blacks uses Oak and Maple.

                          I have yet to smoke anything, personally. But in general, I like mesquite flavor a lot more than hickory.
