I think it's more to get people talking about the list. Texas Monthly just hired a BBQ editor - I believe they're the first major publication to have such a position. If they posted a list that everyone agreed with everyone would just look it over and say "Yup" and keep on moving instead of stopping to debate about it.

That is true with say, American Way and the airline magazines. Not so with Texas Monthly and D Magazine.
