    I like coal fired ovens, and not really brick ovens. In Dallas, it may not be coal fired, but Scalini's in Lakewood has excellent thin crust.

      There are several coal fired around Dallas. Coal fired is still a "brick style" oven, just uses solid fuel for heat instead of gas.

      For the record, there is such a small difference in taste between coal fired, and a brick oven, most people can't tell the difference. The coal fired thing is more marketing than anything. The smell, the ambience it sets. I guarantee you though, I could cook a coal fired and a brick oven pizza, and you wouldn't be able to tell which is which. The taste of the crust comes from the seasoning of the stone, not the coal.

          Their pizza is way better than their website. I know you said Dallas county but I have yet to find anywhere in DFW that makes Chicago deep style with the thick sauce on top.
