  • Buying brisket

    I am having a bunch of people over for a poker game/baby shower event and I am making a brisket or 2 and was just curious if there was anything I should be looking for when buying. I bought several of my last ones at HEB in the vac-packs and then my most recent I bought at walmart in a vac-pack and it seemed different.

    HEB you have to be careful, some offer only select briskets, and some have Choice.


    Look for the USDA choice label on the package. You won't find Prime brisket in any of your grocery stores. Costco and Sams depends on location as well, and sometimes they'll get Angus briskets in.

    If you can find a local meat market, you'll have better options and quality.

          I was thinking Oliver's, but Im not sure if they have them on hand or could get them, as they arent listed on their website.

            Yeah I saw them, I'm also going to try a farm out west of mansfield that is just a little north of where I live.

            As for the country meat place, I might look into it but I always got a bad vibe from that place.

                  Even before I knew that I did. Something about the ads I would see from them just made me not want to go there. I'll swing by there and check them Thursday after work.

                    I agree...I never buy anything in the ads.
                    I always get them to cut exactly what I want and verify the meat/cuts before I pay.
                    The owner used to own 100+ stores and that is the last one he has left.

                      I have a hook up through sysco. Still not very cheap, but better quality than heb, walmart ect....

                        I'd go to Tarleton if it's not too far from you. I go to David's, but they are in Garland.

                            Not true.

                            Just to be clear, choice is choice, select is select, no matter where you get it from. The only difference in quality is difference in the cow, the grade, and whether it's commercial, grass fed, etc.


                            Oh, and I only buy trimmed briksets. No sense in paying for 2 lbs of fat that needs to be cut off anyways.
