I am having a bunch of people over for a poker game/baby shower event and I am making a brisket or 2 and was just curious if there was anything I should be looking for when buying. I bought several of my last ones at HEB in the vac-packs and then my most recent I bought at walmart in a vac-pack and it seemed different.

HEB you have to be careful, some offer only select briskets, and some have Choice.
Look for the USDA choice label on the package. You won't find Prime brisket in any of your grocery stores. Costco and Sams depends on location as well, and sometimes they'll get Angus briskets in.
If you can find a local meat market, you'll have better options and quality.

Just to be clear, choice is choice, select is select, no matter where you get it from. The only difference in quality is difference in the cow, the grade, and whether it's commercial, grass fed, etc.
