I only use cheddar, too. Cream cheese is for Yanks. I like to stuff chunks of fajita chicken into mine as well. Made some badass ones last 4th of July with real lump crab meat.

Jared, I'll see if I can find a picture of the rack I mentioned. Grilling first does help remove some of the moisture in the pepper, and renders off some of the fat while on the grill. If they are coming out soggy, it sounds like it may be happening for two reasons. A) The oven has no way to release the condensation, and B) they could be soggy because they are essentially cooking in the rendered fat from the bacon.
Grilling helps with part A. A rack that elevates the peppers over a cookie sheet would help with part B. Give it a shot sometime.

I really enjoy them grilled, so I don't plan on changing it up. I'm not a fan of warm or soft veggies, but I can dig these because they stay crispy when I grill them.
