                    I stuff whole peppers with cheddar, wrap 'em with bacon and grill them. You don't need a hot fire. It will flare up bad. Use thin bacon and they will be done quickly.

                    Last night I grilled filets and asparagus and made baked potatoes. Yum.

                      I think you may be doing something wrong. I start mine on the grill, to get a very slight char, and finish them in the oven. They never come out soggy. It also helps if you put them on a rack that holds them above the actual tray.

                        I only grill mine. They come out awesome. Tiff's dad bakes his, just like the recipe above, and they come out soggy every time. Pretty gross. If you start yours on the grill that must be the difference.

                        Wright's is my favorite. Unfortunately, by the time the thick bacon is done, the jap is too far burnt and the cheese way too runny. It also flares up a lot worse. The thin bacon cooks a lot quicker. Again, I use Wright's for every other application involving bacon, and sometimes still use it for my poppers.

                        I only use cheddar, too. Cream cheese is for Yanks. I like to stuff chunks of fajita chicken into mine as well. Made some badass ones last 4th of July with real lump crab meat.

                            Well, yes... But not everyone has a smoker. And if I'm grilling everything else, I'm not firing up the smoker just for stuffed & wrapped jalapenos.


                            Jared, I'll see if I can find a picture of the rack I mentioned. Grilling first does help remove some of the moisture in the pepper, and renders off some of the fat while on the grill. If they are coming out soggy, it sounds like it may be happening for two reasons. A) The oven has no way to release the condensation, and B) they could be soggy because they are essentially cooking in the rendered fat from the bacon.

                            Grilling helps with part A. A rack that elevates the peppers over a cookie sheet would help with part B. Give it a shot sometime.

                              I really enjoy them grilled, so I don't plan on changing it up. I'm not a fan of warm or soft veggies, but I can dig these because they stay crispy when I grill them.
