I grew up on shitty Oklahoma Tex-Mex for the most part and didn't really develop a taste for good Tex-Mex until I was in my mid-20s and living in Houston. I don't particularly care for "Authentic" Mexican food, although I think most of what I've had has been food you'd typically find in the border regions. I'd be interested in trying food from other, more prosperous areas of Mexico. As my tastes have evolved, I like New Mexico-style food the best. Lots of green and red chiles and tons of heat.
Slightly off topic, but I've finally found a solid family-owned place in OKC that has two menus - one Tex-Mex and one "Latin American". I've been blown away with the Latin dishes, especially the Peruvian Saltados and the Brazillian Fejoada. Great stuff.
The family and I were in Grapevine last week to do Great Wolf Lodge and I saw Mi Dia as I tried to navigate that constructon clusterfuck at 114/121. Didn't want to bring 4 kids in who wouldn't appreciate it, but planning on being back with just the wife to try it out soon....
