I've done both ways in my elec and it does make a difference... but these electrics hold moisture REALLY well... I'm not sure about the BGE's I'm too poor to buy one of those

I will sometimes use a water pan, but it depends on what all I'm cooking. I usually don't have room for it. I also don't really use it for the moisture, I use it more as a barrier because my shitty smoker doesn't have a deflector between the fire box and smoke chamber, but again, I usually don't have enough room for one because the rack is usually full of meat. We only did one rack of ribs and a chicken this past weekend, so I did use a water pan.
Next time, try hitting it with some spray butter when you wrap it.
