Invest in a nice little smoker and you won't have to get up at 2am in order to have a quality product nor baby sit the temperature. From the pic it looks like you either the temps got pretty hot near the end of your cook or the temperature range was a little too high for the duration of the cook. The lower section, seen to the far right in your pic, looks pretty dried out to me.

Yeah this one was given to me, I haven't invested in a good one yet because of where I live I would worry to much about it. It turned out great, I forgot to get a pic of it once it was done because we had a bunch of people over and it was a little hectic.
What would you recommend as a "nice little smoker" I have this one and and electric one that does well for smaller briskets but this one was just a bit to big.
