      My shop's even farther. But hell, with room (3 acres) to spread out and get everyone's smokers together, not to mention coolers and cars, what's a bit farther drive?

      We could get a few volunteers together to come down and blind judge. It would mostly be a hang out and shoot the shit while sharing ideas on bbq, but why not?

        Ya I wouldn't mind I do work alot though. Ill have to find an ice chest big enough to cram all my shit in and have to make the drive in a f350 so how much further are we talking .

            staight down 35e to 67 and then south for a while. This is all assuming we can get Brent, Matt, Chris and some of the others who like to throw down and smoke to all drag their shit down too. Maybe a Saturday night into Sunday deal.

                Just pm me some information and I'll see what works for me. If its not but maybe 5-6 people smoking I wouldn't mind giving everyone a loin strip primal and some other primals just to see the difference and maybe learn something new . But I'll need to know beforehand what anyone would want . I'm almost tempted to smoke a whole to ribeye primal to see what happens

                  Yeah, I was looking at the one I got thinking about what it would be like to toss it on the rack.

                        Idea is we can all get together, hang out, smoke some meats, toss around ideas, etc. Ive got plenty of space at my shop in Venus, even though it is a drive for everyone, it gives us a couple of things: nobody around to piss off, call the cops, fire dept, etc. We have plenty of parking, room for smokers and grills, running

                              I Smoke fat side up, then when I wrap it and put it in the cooler, I put the fat side down so that only the fat sits in fat and liquid, as I don't like my brisket overly wet, but I do like it juicy.

                                I started fat side down and flipped it at about 100 degrees. Left it fat side up until 165. Then wrapped it until 180 and threw it in a cooler with towels for an hour and a half. Came out super tender but a little on the dry side. Not overly dry but just a little less juice than I would have liked. If there is a dfwm smoke party I am down to tow my rig from Abilene to partake if it is on my days off as long as you don't mind me sleeping in my truck till first light. Never been able to have something on the smoker without a shiner in my hand. Not a fan of drinkin then driving that far back.
