Bought a whole beef tenderloin at Sam's friday and cut steaks out of it. Decided to make a stew with the scraps, and I must say for my first attempt a stew ever it turned out pretty damn good.
Ingredients:
Beef Tenderloin end piece and scraps
Opas Jalopeno cheese sausage
Onion
Red potatoes
Mushrooms
Beef Broth
Garlic Chicken Broth
Hot Pico De Gallo
Minced Garlic
Sea Salt
Pepper
I seared the big piece of tenderloin and cubed it, browned the scraps in a dutch oven on the grill with some onions then added broth and rest of ingredients. Simmered for an hour or so, uncovered added a mixture of broth and flour to thicken and simmered for another 45 min uncovered.
I think next time I will leave out the sausage and I intended to add some worcheshire, but forgot.
