  • Mexican Corn on the Cob

    Why havent I heard of this?

    3 tablespoons fat-free mayonnaise
    2 teaspoons fresh lime juice
    2 tablespoons finely grated Parmesan cheese
    1/2 teaspoon chili powder
    1/4 teaspoon ground red pepper
    1/4 teaspoon ground cumin
    1/8 teaspoon salt

    4 ears shucked corn
    Cooking spray

    Prepare grill.

    Combine mayonnaise and juice in a small bowl.

    Combine cheese and next 4 ingredients (through salt) in another small bowl.

    Place corn on a grill rack coated with cooking spray. Grill corn 12 minutes or until tender, turning frequently. Remove corn from grill; brush with mayonnaise mixture, and sprinkle with cheese mixture. Serve immediatel

            Just try it. Off the chain. A lot of guys will use sour cream instead (I like sour cream better but are both good)

                    I must be too white, because I have never heard of such a thing. I am going to be giving it a try sometime this week, but probably with sour cream instead of mayo. I love mayo on a sandwich, I'm not sure about on my corn.

                      anytime i fire up the grill, i throw a few corn on and prep them mexican style.

                      leave a few layers of husk on the cob and soak in water.
                      throw on grill till cooked. peal husk back and burn off remaining husk strings.

                      i never use mayo (cant stomach the thought of it) and besides, it's more authentic to use mexican creama. (i just skip this step).

                      i would use queso fresco or cotija instead of parmasan.

                      cayenne pepper + hungarian sweet paprika blend would be my spices of choice.

                        I like mine with a hell of a lot more chili powder (freshly ground chipotle, usually), but elote is definitely a taste and season thing. I also like to add a bit of queso fresco and cilantro.
