    Do you add your oil prior to the pan getting hot or after? Or any oil at all? Discuss.

    I add it before heating the pan. I think heating the pan first may be dangerous. I'm just talking out of my ass though.

      I see your logic... Hmmm. Makes sense. But what about adding something that has oil on it to a hot pan? Shouldn't it just burst into flames then?

        Before. As soon as you see it ripple, heat comes down a bit and food goes in.

            I've never heard of heating the pan dry before adding oil. What Geof said on the ripples. You can also put a drop of water in it, and of it sizzles and pops it is ready.

            Heating the pan with oil can be dangerous too, of left unattended or on high for too long. Just ask my ex wife, who left the pan a little too long while making puffed tacos, and set the kitchen on fire....
