I know that in the surface Navy, we only got the UHT stuff when we weren't around any dry stores ships or ports. The rest of the time, it was "normal" milk. Biiiig difference in taste.

bullshit it doesn't... I've had organic milk last up to 2 weeks beyond the expiration date, which is typically 1 month out from purchase date. Regular whole milk lasts 2 weeks at the absolute most, but usually doesn't last that long.
the date is merely a guideline. I go by smell. But I also keep my fridge cold as shit, and the milk goes immediately back to the fridge after pouring.

The expiration date is the furthest date the bottler can predict something will stay good while sealed. Once it's opened, it's meaningless. The overall level of sterilization is higher with UHT, but after the milk is opened, you're relying on the environment it's kept in to keep it fresh. Obviously your fridge needs to be cold and clean, and your kitchen needs to be clean, but studies have shown that air quality in your house makes a big difference, too. This month's food safety magazine had a cover story on airborne mold contamination in food plants, in fact.
Yale must think that my fridge is kept at a balmy 82 degrees.
I don't think people realize how much goes in to how long milk lasts, and the fridge temp is one of them. I read an article about it several years back, made some changes on my end, and it made an immediate difference in how long it lasts. I'll see if I can find it.

I was in a pretty cool food plant a few weeks ago. I couldn't believe the amount of sanitation and shit that was in place, and I had to go through it all every time we went to a new section of the plant. It was by far, the cleanest food mfg facility I've ever been in. And had WAY more sanitary safeguards in place than any other plant I've been through. Granted, it's not every day that I get to go through a food plant, like I do restaurant kitchens, but I've been through several, and this one was ridiculous.
