  • Is it still good??

Ok, I set some of Hines' steaks cuts out this past Sunday. I had cut them and froze them in a non-vacuum sealed bag. Took them out about mid day on Sunday and they've been salted since wed. I work crazy hours and today is the 1st time I would be able to cook them, question is are they still good?

Lol.. i did, they dont smell bad. Plus i cant tell since they've been salted and the salt had plenty of time to break down the meat.

If they don't smell bad, I'd eat them. What time should I get to your house?

If they've been curing since Wednesday, they're probably already cooked.

When you say you set them out, in what conditions? Temp controlled or humidity controlled?

Or did you just set them out on the counter of your kitchen?

They were refrigerated. They weren't bad but they were too salty. I went ahead and wrapped chicken strips and bacon and grilled that instead.

I usually wipe off the extra salt and pat the steaks dry after they've sat for awhile. Osmosis will drag salt into the meat and i'll just pepper the outside before grilling.

Yeah, the salt is only supposed to stay on for an hour or so before you grill them. Then you rinse and season accordingly.

I bet those things were like trying to choke down country ham.
