last night I took some red taters, cut them into bite size chunks, peeled fresh garlic and made a tin foil boat. Put a little olive oil down, threw the taters and garlic on the foil, added rosemary, salt, pepper, and Mrs Dash. Closed up the foil so it was like a bubble, placed on grill and cooked over medium heat for about 20 minutes. Added 1 tablespoon of water and resealed it, and cooked till tender. Pretty tastey, and easy to make.

I do something very similar, minus the Mrs. Dash, add onion, add S&P, ad I do it in a cast iron skillet over open flame. Star out with it covered to soften the potato, then remove the lid to let it get a little crunchy around the edges.

Lyn's not a big fan of onions, but I am! I like the foil, easy clean-up, but the iron skillet does make them crunchy. I have those Le Cruisette (sp?) cast iron pots/pans I could use on the grill I think, may have to try that way.

I've done this many times myself. It's a great way to cook potatoes. I do several different spices but my favorite is to just coat everything in olive oil and sprinkle with crazy salt..

I also like backing asian sweet potatoes. They are just damn good. I got addicted to them from street vendors in Japan that sell them hot off the coals in the dead of winter. You don't even have to bother putting butter on them (though it does make them even better) you can just eat them straight up..

Way to make them without butter as well.

Just pulled a test one off the grill. Just put in butter and brown sugar. Tastes almost like candied yams.

Pro. The sugar liquified and the potato sucked it and the butter right into it. You can see the ring in the potato once cut where it got sucked in.

Cons the potatos are way harder to core (used the green one in your link from Willie world) it split the ends a bit I made it work. Wife said I should have bacon wrapped it as well. I am thinking next time I will do the thick cut hickory smoked bacon.

Overall it turned out really well. I left it on till it was nice and soft in the foil. I would have posted a pic but the wife already killed it.

Doing a beer can chicken right now then putting on some peppers for the rest of the week
