    I did this on Memorial day and it was DAMN GOOD!!



    Here is what I did. It was stuffed with Cheddar, butter, prosciutto, and wrapped with thick bacon.. I screwed up and forgot the onions but it was still delicious.

    Also, I'm thinking about trying this with sweet potatoes stuffed with brown sugar, butter, and perhaps some other goodies..

      OK, the bacon looks good, but how does this differ from a regular baked potato?

          Still going to rock these with cheddar, chives, onions, butter and light jalapeño inside with thick applewood smoked bacon wrap... Just need to grab an apple corer.

            Mother of god my parental units are coming into town they will love this... Think the cooking time changes? I don't know much about sweet potatoes cept I am the only one in my family who will not eat them.

              Those look awesome, and I can already think of several different variations. It's a damn shame I'm back to trying to eat as clean as possible.

                BTW, I recommend the apple corer I have linked below. Walmart does have them in store.



                The plunger is perfect for stuffing more meats, cheese, and butter into the potato...

                Oh, and just so you know, the bacon sticks really well to the skin and is AWESOME!!

                  I think an hour at 400F on the grill should do you just fine as long as the sweet potatoes haven't been refrigerated. Just be sure to flip after half an hour..

                  Just remember, I haven't tried it yet, so you're on your own Let us know how it turns out..

                    One other thing.. Eggplant bombs.. Just throw a whole eggplant on the grill and let it sit there for an hour at 400F...

                    Then it goes BOOM and you have a mess to clean up... My wife found this out the hard way yesterday.. LMAO.

                        I've made them with diced jalopeno cheese sausage, cream chz and grated chz and they were damn good.

                            Woke up at 5 this morning and since I was up popped out to wal mart and grabbed that corer.

                            Going to try different versions today. One that has been stuck in my head is pepper jack cheese and corned beef. Another will be cheddar and roast beef. Might go grab a sweet potato for the brown sugar science project.

                              Hmm, can't have those since Lyn won't eat prok. Guess I could use turkey bacon!

                              last night I took some red taters, cut them into bite size chunks, peeled fresh garlic and made a tin foil boat. Put a little olive oil down, threw the taters and garlic on the foil, added rosemary, salt, pepper, and Mrs Dash. Closed up the foil so it was like a bubble, placed on grill and cooked over medium heat for about 20 minutes. Added 1 tablespoon of water and resealed it, and cooked till tender. Pretty tastey, and easy to make.
