    So I read about this on a smoker forum.

    Basically you smoke the steak for about an hour at 185 ish. Then you put our on your gas grill for a couple minutes to give it some bark. Now your steak won't look rare or anything but it will be very tender and taste fantastic.

    I did it today with some strip steaks from Hines and they turned out fantastic with great flavor and very very juicy. Basically no knife or teeth needed (but not mushy).

    Sounds good. I will probably try it once but seems a lot of trouble for a steak. I will have to test it out. I like the red in the middle.
    Why put off till tomorrow what you can put off till the next day?
