    I've had them several times in Mexico and a few times in south Texas. Have never cooked them, but found some at a meat market and plan to try. Who has cooked them/has a recipe?

    Wanting to eat them as tacos...

    I thought they were typically just dredged and fried.
    How do we forget ourselves? How do we forget our minds?

      I've heard that, as well as grilled...I've read a lot about prep, was looking for someone that's done it themselves....Thx

        We get them every time we slaughter one of the cattle. Basically, soak them overnight in cold water, the next day pull them out and blanch them by putting them in a pan of water, not hot, and bringing it up to boil, then shock them in a bowl of ice water. take out, pull off the pieces of gristle, and do what you want after that. They should be pretty firm, and you can cut them and cook however you want. Some people like to put them in the fridge for a day with a weight on top after you trim them to flatten them out, but all those steps should by and far get all the blood and nastiness out.

          Yep, did all that and cooked some last night....they turned out good, but not as good as what I've had at the places I've eaten them...if anyone has any seasoning recipes and their preferred cooking method and times, please post up and I'll try that next time.
