    Since I got the day off and it's nice out I figured I'd fire up the smoker and cook a brisket. More pics will follow.

      i prefer to foil it. I know some wait, I just foil it immediately.
      Easier for me with an 'ugly drum smoker'

            Never smoke in a vertical smoker before - but I rarely see people wrap in those - just a pan at the bottom with a little water.

            I still prefer a horizontal smoker, due to having one but I also cover loosely for a slow smoke until the end (depending, 1-4 hours).

              I never foil anything in my bullett until 1-2 hours left on the cook time, if I even wrap it at all. Usually depends on how the outside of the meat is doing. If the outer area of the meat is starting to dry out any then I will foil it up. If everything stays nice and moist then I'll leave it as is, with the exception of ribs, depending on if I want them to be "fall off the bone" or not.

                Easiest way to begin a new hobby, IMO. Pork butt is very forgiving whereas something like a brisket is not. You can let the heat get a bit more out of control(within reason and for short periods of time) and still not have a negative impact on the end product. What size butt are you going to do? What kind of smoker are you using? What kind of fuel source are you using?

                  All finished. Sure was good. Sliced perfected and could eat with just a fork.


                  I finally got to use my new cutting board my wife got me.

                      LOL she got it from Bucee's. It's made in Texas from Texas wood, but it wasn't cheap. $140.
