They are made fresh daily, then frozen for shipment. Just pop them in the steamer.
From what I can tell, they don't lose any quality. We do a bunch of business with those people, an they came up with 40 dozen or so to test in our kitchen. Their minds were made up after cooking 6 dozen, and they left the rest with me. Even after being frozen, they were still he best I've ever had.
Don't get me wrong, I wasn't trying to say they weren't made fresh everyday, but by the time I get them they will be at least 1 day old, more likely 2 days. I just like them fresh out of the steamer the first time around. If I am ever down in south Texas again I will try to remember to swing by one of their locations and give them a whirl.
