1 head garlic, broken into cloves and peeled
3 tablespoons sugar
1/3 cup fish sauce or soy sauce
3 tablespoons honey
3 tablespoons rice wine (sake)
2 tablespoons dark sesame oil
1 tablespoon lime juice
1 tablespoon fresh grated ginger
2 teaspoons salt
1 teaspoon pepper
Combine everything above and blend into a paste. Let chops marinade for 2-24 hours. Grill over high heat 6 to 8 minutes per side or to 140-145* internal temp. Serve with Jasmine rice. Enjoy

Not grilled, but one of my favorite comfort foods is pork chops smothered in mushroom gravy. Pan fry with blackening seasoning, drain of most of the oil, but leave a tbsp in there, leave the cracklings. Two cans of cream of mushroom soup, one can cream of chicken, and half a cup of milk. Season to taste. I use black pepper, cayenne, and salt.
Simple as shit, and while there is much better food out there, it's pretty damn tasty. One of the things I grew up eating because it was quick and cheap.

It's sake. I don't think it brings much if any flavor so you could probably substitute for regular cooking wine or omit all together. The real flavor comes from the ginger, garlic, sesame oil and the sugar that carmalizes on the grill.
4 boneless pork chops
Salt
Pepper
Dried thyme
Dried rubbed sage
1/4 cup blackberry preserves (seedless)
2 T. balsamic vinegar
2 T. Orange Juice
2 T. Olive Oil
Season chops with the spices and cook in the olive oil -- about 4 minutes per side. After removing chops, stir together the preserves, juice and vinegar in the same pan you removed the chops from. Bring to a boil and continue to simmer while stirring until the sauce thickens to your liking -- usually takes about 4 minutes or so. Serve sauce over chops.
