Beef stew

So I am looking to make a beef stew in the crock pot and usually I just cut up vegetables and throw them in with meat and one of those premade seasoning packets, it always comes out pretty good. This time though the GF forgot to buy a seasoning packet so I figure I would ask the chefs of DFWMustangs what they would use for seasoning?
