Excuses my ignorance but can someone explain "playing the spread"?

Say one team is shittier than the other. The other team has to beat the shittier team by whatever the spread is. Like for example cowboys vs giants say the score is cowboys 21 giants 27 the spread is 7. Even though the giants won they still lost.

Or Pittsburgh 28 Baltimore 30 with a +/- of 3. Even though the shittier team still won, they lost because they didn't cover the spread.

I really did pick not realizing they were against the line. I have never picked like this before. Its going to be different.

If it's -1 or +1 you're picking the winner outright at that point.

I can't believe the lines on some of these games. Dallas only favored by 3? Washington only by 3? Dallas should be favored by 7 at an absolute minimum and Washington, by at least 5, after their showing last week.

If these are the real lines, I'll be laying down some money this week.
