Things to do in Destin?

Headed there for a family vacation next month and looking for some ideas or must see's/must do's. We'll have our two year old with us so most everything will revolve around him, but the in-laws will be there as well, so I'm sure they'll watch jr. if we want to get out and have some adult fun. One thing I'm really interested in is going out fishing with my father-in-law one morning.

Rent pontoon boat and go to crab island. don't know what the weather will be like next month but I did that in July and it was tits.

Dad and I fished on the Sweet Jody.. Had a blast+ caught tons+ it was cheap...

We took our kiddo to Gulfarium. Basically a small Sea World. It was meh but the 3yo enjoyed it. The rest of the time was either spent on the beach or shopping because of heavy rains and lightning for 2 days straight.

-Fudpuckers in Destin has live alligators so your kid might like that.
-There is an Air Force armament museum just south of Eglin AFB.
-Sandestin is a pretty cool place to walk around and shop/eat.
-Destin Commons has a bunch of stores and a pretty cool little area for kids.
-Seaside is a pretty neat little town that is about 30mins east of Destin (parts of the Truman Show were filmed there)
-The Donut Hole is a really good place for breakfast.
-The Swamp on Okaloosa Island has pretty decent concerts from time to time so you might want to check that out.
-AJs is a pretty cool place as is McGuire's
